Rinse millet, urad dal, fenugreek seeds, and poha thoroughly. Soak them all together in water for 6–8 hours or overnight.

Drain the water and grind the mixture into a smooth batter. Add water gradually to get a pourable consistency – not too thick, not too runny.
👉 Step 3: Ferment
Transfer the batter to a deep vessel. Cover and leave it in a warm place for 8–12 hours. You’ll know it’s ready when the batter rises and bubbles appear on top.

Add salt just before you’re ready to make dosas. Stir gently and your batter is ready to use!
